Candied nuts are a terrific generic garnish for many desserts. They add crunch to creamy desserts and height to flat ones. Depending on the flavor of the dessert, I use a wide variety of nuts—almonds, macadamia nuts, pecans, or walnuts. They all work well. For added flavor, feel free to add ground spices such as cinnamon, cardamom, or ginger to the egg white before whisking.
