This unusual dough is reserved exclusively for making Cornish-style pasties. While most of the recipes that pasty makers have revealed call for solid vegetable fat, I was bent on using only butter, but I was afraid that butter might not survive the vigorous mixing that the dough requires. Fortunately, butter held its own, resulting in a dough with both the right degree of elasticity for making pasties as well as excellent flavour.
