Most cookie doughs enhanced with ground nuts don’t have enough added to make much of a difference to the dough’s taste or texture. This dough is loaded with ground almonds, so it has great flavour and a crumbly quality that sets it apart. While any ground nuts would work, blanched almonds are my choice for the delicate flavour and texture they impart.
