My friend Cenk Sönmeszoy first told me about katmer - a square pastry containing several layers of dough as well as Turkish clotted cream, sugar and finely chopped pistachios - and sent me links to videos of some very skilled bakers who throw the dough around like a bed sheet to make it larger and thinner. I even had a chance to try my hand at it when I visited Mustafa Özguler’s Orkide pastry shop in Gaziantep and had a lesson from katmer mast
