You will need a 1cm wooden dowel, about 60cm long, to make this simple and beautiful baklava variation, in which dough and chopped pistachios are rolled around the dowel and the outside layer of dough wrinkles as the roll is removed. A hint of lemon that emphasises the pistachio flavour is added to the syrup used to moisten these after baking.
