My maternal grandmother loved to make these, and I can understand why - they’re light, luscious and easy to whip up from very little in the way of ingredients. The standard coating is cinnamon sugar, but sugar mixed with grated lemon or orange zest is delicious too.

Ingredients

  • 1 batch Pâte à Choux (page-204)
  • 100 g sugar
  • ½ teaspo

Method

  1. Combine the sugar and cinnamon in a medium bowl.
  2. Heat the oil in a deep pan or wok over a medium heat to 180°C. Line a Swiss roll tin with kitchen towels.
  3. Use a teaspoon to scoop up a spoonful of the dough, then use a second spoon to scrape it out into the hot oil. Work with the spoons close to the surface of the oil so it doesn’t splatter.
