A soft, sustaining dish from the old kitchen garden. This dish was suggested to me by my mum’s cousin Gino and his lovely wife Pina, who remembered it from our family table when they were young. Frascatula has ancient and humble roots. Its name likely comes from the French flasque, meaning soft or loose, and it’s thought to have been introduced during the 13th-century French occupation of Sicily, when soldiers made it as sustenance.
