A delicate filled pasta with a silky root vegetable and cheese centre, served with a nut-based ragù that captures the warmth of autumn. Occhi (literally “eyes”) are a lesser-known filled pasta shape with a smooth, domed profile, traditionally found – in slightly differing versions – in both northern and southern Italy.
