A golden, sugar-dusted pastry filled with soft hazelnut cream, crisp on the outside and melting within. Throughout Italy, sweet fried ravioli mark moments of festivity. You’ll find them at Carnevale in Tuscany, filled with ricotta and chocolate, or at Christmas in Calabria, where they might hide grape must, nuts or jam. In Sicily, similar shapes are made for San Giuseppe and other saints’ days, often with chestnut cream or sweetened ricotta.
