Crispy on the outside, soft and cheesy in the middle. A second life for yesterday’s risotto. In Sicily, arancini are a big deal. Even the name causes arguments. In Palermo, they say arancine, feminine, while in Catania, they’re arancini, masculine. Let’s just say they’re gender-fluid and leave it at that. Whichever side you’re on, the result is the same: crisp, golden rice balls with a molten centre and plenty of personality.
