A shortcut to the base of countless dishes. Every good sauce starts with a soffritto. This version gives you a head start whenever you need one. It’s not fancy: just onion, carrot and celery blitzed and frozen in small portions. It will save you so much time when the pan is hot and you’re in a hurry.

Ingredients

  • 4 onions
  • 4 carrots
  • 4 celery stalks

Method

Blend the Base: Roughly chop the onions, carrots and celery. Add to a food processor and pulse until very fine, but not watery. You can chop these by hand if you prefer a coarser texture and have the time.

Portion and Freeze: Spoon into ice cube trays or small containers in manageable portions. Freeze until solid, then transfer to a large freezer bag. Use each portion stra
