Ingredients: 15 g inverted sugar; 285 g Opayls 33% white chocolate; 10 g lemon confit pieces (0.5cm dice); 50 g unsalted butter; 2 g lemon zest; 170 g whipping cream; 10 g fresh mint; 10 g lemon zest; 2 g green colour; 2 g yellow colour; 1 batch basic macaron mix

Make the basic mixture as per the recipe, adding the lemon zest to macaron base before adding the meringue. Divide this mix into two before adding the colours, one half green and one half yellow, then pipe and bake as instructed.
