Ingredients: 400 g pumpkin purée reduced to 200 g; 30 g egg yolks; 10 g caster sugar; 10 g custard powder; 3 g gelatine; 125 g butter; 1 g ground star anise; 2 g ground cinnamon; 2 g ground mixed spice; 1 batch basic macaron mix; 2 g ground star anise; 2 g orange colour; 2 g mixed spice; 3 g ground cinnamon

Macaron

Make the basic mixture as per the recipe, adding the spices to the almond base before adding meringue. Add the colouring to the meringue before mixing with almond base, then pipe and bake as instructed.
