Ingredients: 200 g caster sugar; 30 g cooked popcorn; 125 g popcorn milk; 1000 g milk; 25 g Greek yoghurt; 280 g Biskella 34% milk chocolate; 50 g caster sugar; 50 g unsalted butter; 48 g butter; 27 g caster sugar; 100 g T55 soft flour; 28 g cocoa powder; 15 g egg yolks; 1 g salt; 100 g popcorn milk; 10 g caster sugar; 20 g egg yolks; 8 g custard powder; 67 g unsalted butter

Method

Popcorn Milk

Make a direct caramel with the sugar, gradually adding it in stages. Add the popcorn and coat evenly, add the milk and bring to the boil. Place in a Thermomix and blend on full speed for 10 minutes. Place in a vacuum pac bag and seal everything, leave to infuse for 24hrs before using.
