Carrot cake

Carrot cake is one of the first recipes I ever mastered. I used to make carrot cake cupcakes with cream cheese icing and take them into my work experience job at Logan Brown Restaurant in Wellington. Eventually the cakes made it onto the high tea menu in mini form — which was the first time something of mine featured on a restaurant menu. The carrot cake recipe here is derived from that original one, but has changed so much over the years that it’s truly my own.
