Pandan is a fragrant leaf used in both sweet and savoury dishes in many Southeast Asian cuisines. It has a slightly grassy but floral flavour, that works incredibly well with the yuzu and coconut. Pandan comes in many different forms. Here I have used pandan essence, which gives the crémeux its vibrant green colour — a signature of any pandan-flavoured treat.
