This soup is made with Jerusalem artichokes, which look like small knobbly potatoes, not the leafy globe variety. Artichokes have a pro-nounced, though delicate, flavour, which makes for a very good soup.
Peel and slice the artichokes, then heat them gently in the butter for a few minutes. Add the water and stock cube, or Simple Stock, making sure the artichokes are covered by about 2.5 cm (1 inch). Season with salt, pepper and nutmeg, bring to the boil, then reduce the heat and simmer gently for 45 minutes to 1 hour or until the artichokes are tender.
