If you find beetroot cloying on its own, try this excellent winter salad, where the sweetness of the beet is offset by the crisp texture of celery and pungent taste of onion.
Peel the beets and cut into dice. Scrub the celery well and cut crossways into thin strips. Slice the onion finely and separate the rings. Combine all the ingredients. Add dressing to taste and if possible leave for a few hours before eating.
An ordinary vinaigrette dressing is quite adequate for this but if you want to glorify the salad the following vinaigrette-plus will do the trick.
