Celeriac, if you have not come across it before, is a large bulbous-looking root - it is, in fact, the root of the celery plant with a coarse brown skin. It has the flavour of celery, but is a more manageable vegetable for dishes like this one. It also makes an excellent salad, served raw with a mustardy dressing.
Scrub the celeriac, and cook, unpeeled, in water till it is quite tender. Wearing rubber gloves (the peel stains), peel and mash it, then put it through a sieve. Mix with boiled sieved potatoes. Return to the pan and beat in a good lump of butter and plenty of seasoning - salt, black pepper, a little nutmeg - over a low flame. If you have any cream stir that in too.
