There is a trick to making these crisp, puffy, golden fried onion rings, which is worth learning. Some people will eat almost anything provided you dish up a pile of these onions at the same time.
Sprinkle the onions with salt and leave on a plate for 20 minutes or so, to sweat out their moisture.
Drain the onions, shake off excess salt and dredge with flour (the easiest way to do this is to put the flour in a paper bag and to shake the onions around inside it). Fry the onions in hot oil for 5 minutes.
Take the onions out of the pan with a perforated slice. Reheat the oil
