After washing the cabbage, don’t be fussy about drying it; the water that adheres to the leaves will provide its cooking liquid.
Melt the butter in a saucepan, add the onion, cover with a lid and cook over a very low heat, stirring occasionally, until the onion is soft but not brown. Add the cabbage, apple, sugar and salt. Stir, then replace the lid and cook over a very gentle heat for 20-30 minutes, stirring once or twice, until the cabbage is tender but still fresh-tasting.
