Revising this book, I was amazed to find no recipe for shepherd’s pie, made with minced lamb or mutton, or cottage pie, made with beef. Perhaps I thought it was too familiar to be worth including. Anyway, I’m grateful for the chance to repair the omission because this is the friendliest of our native dishes.
