Little jars of sun-dried tomatoes in olive oil are exorbitantly expensive. Buy them dry when you can from a delicatessen or Italian shop and preserve them in oil and herbs yourself.

The quantities given in this recipe are enough for six if you will all be contented with one rib each. Serve a hearty rice dish to go with it.

Ingredients

  • 6 meaty spare ribs
  • 1 tablespoon soy sauce
  • 6 garlic cloves, finely chopped

Method

When you bring the pork home, or at least 30 minutes before cooking, put the spare ribs into the earthenware pot or casserole in which you are going to cook them and sprinkle them with the soy sauce and three of the finely chopped garlic cloves.

Cook the spare ribs, uncovered, in the oven at 180°C (350°F, gas mark 4). They do not need any extra fat or moisture as they produce their own.
