Brisket is a humble cut of beef, inexpensive and fatty but, like many such, it rewards thoughtful cooking with a beefiness that makes much more expensive cuts taste pallid by comparison. It’s the fat that does it; in this recipe it is slowly rendered out of the joint (you can pour it off, for dripping), leaving it succulent and full of flavour.
