Apricots are quite a reasonable price towards the end of the summer, and they make excellent fool. If you can’t run to 300 ml (10 fl oz) cream, use the smaller amount and add the beaten white of an egg.

Ingredients

  • 450 g (1 lb) apricots
  • 3-4 tablespoons sugar

Method

Cut the apricots in half and take out the stones. Crack open four or five of the stones with a hammer and extract the kernels. (The kernels add an extra something to the flavour so this little effort is worth making.)

Put the apricot halves, kernels and sugar into an ovenproof dish, add just enough water to cover them and bake in the oven at 180°C (350°F, gas mark 4) until the apricots
