Herrings are very good rolled in oats, and fried. They can be cooked whole, or split, boned and flattened.
Wipe the fish carefully, then season them with salt and pepper. Sprinkle the oats on a sheet of kitchen paper and toss the fish in them until well coated. Heat the dripping or butter and oil in a frying pan and, when smoking hot, put in the herrings and fry until brown on both sides. Whole herrings will take 7-10 minutes; split herrings will take 5 minutes.
