Boiled haricot beans make a pleasant salad which can be eaten on its own, as an hors d’oeuvre, or with cold meat, salami, ham, etc. This is a handy way of using up any leftover boiled beans.
Drain the beans, preferably while still warm, and season to taste with French dressing, salt and black pepper. Stir in the onion and parsley.
