An excellent recipe for the end of the week, when you are running out of cash and/or ideas. All you need is lots of onions, butter, shortcrust pastry and a couple of eggs. The filling is very tasty and the tart can be eaten hot, lukewarm or cold.
Roll out the pastry and use to line a 20-23 cm (8-9 inch) flan tin. Put the onions in a saucepan with a little water, and cook over a low heat until soft and tender. Add the butter and leave to stew for a few minutes longer, then take them off the heat and add just enough flour to bind them. Season with salt and pepper, and add the eggs and 1 tablespoon cream,
