Suetcrust is made in much the same way as shortcrust, using beef suet instead of butter or margarine. One useful point about it is that it can be used either for steamed puddings, like steak and kidney pudding, or baked as in jam roly-poly. Properly made, it is light and melting, and is associated with some of the best traditional English dishes.
