Pancakes sprinkled with brown sugar and lemon juice, or filled with apricot jam, are an almost irresistible pudding. They are not difficult to make unless you are aiming for perfect circles, in which case you will need a cast-iron pan made especially for the purpose, straight-sided, like the ones used in Brittany, where pancakes are a local speciality. An ordinary medium-sized heavy-based frying pan gives less immaculate results, but the taste, after all, is the same.
