The touch of inspiration in this recipe, given to me by a French friend, is the caramelizing of the onions which gives the soup colour, body and a rich but delicate flavour all at once.
Melt the butter in a large frying pan and put in the onions. Stir them around until they begin to go soft, then put in the sugar. Keep stirring until the sugar browns - brown not black - and then pour in the hot water and stock cube with the vinegar. Simmer for 15 minutes, taste and add salt and pepper if necessary. Serve plain with buttered toast.
