Made from fermented soybean paste, miso is sold in jars in healthfood stores and most supermarkets. Boiling water, a few sliced spring onions and a few tablespoons of cooked rice turn a heaped spoonful of miso into a saltily refreshing broth in - literally - minutes. The taste is not unlike Bovril, but nuttier. Excellent sustenance for the morning after, or an upset stomach when only the purest dish is acceptable.
