When you are in a tearing hurry, or faced with the job of concocting a meal out of a lump of stale cheese and some dry bread, Welsh Rarebit seems the obvious answer. The best cheese for this, I think, is Caerphilly, which gives a sharper, lighter texture than Cheddar, but I realize that this is a counsel of perfection.

Ingredients

  • 125-225 g (4-8 oz) cheese
  • 1 teaspoon mustard powder

Method

Grate the cheese and mix it with the mustard, salt, pepper and Worcestershire sauce. Bind with the beaten egg. If you can spare it, a knob of butter worked in helps. Toast the bread on one side only. Spread the other side thickly with the mixture and stick it under the grill until the cheese topping is puffy and lightly browned. Eat at once.
