This is a handy way of cooking eggs, as a change from frying, baking or poaching them. For some reason, they taste better like this.
Put a heatproof plate over a saucepan of boiling water (you could be cooking potatoes or a vegetable in the pan at the same time). Place a few scraps of butter on the plate. When they melt, crack the eggs carefully and slide them on to the plate. Sprinkle a little salt and pepper over them and cover with another inverted plate. Look at them after 3-4 minutes.
