A cute, intriguing starter to a dinner party. Also appealing to children. It can be cooked in ramekins, in hollowed out bread rolls, or on rounds of bread (rubbed with garlic or tapenade) lightly toasted in the oven.
Break the egg yolks into separate cups, put the egg whites into a bowl and whisk them with a pinch of salt till firm. Rub the garlic or tapenade on to bread rounds, if using. Butter the ramekins. Spoon beaten egg white into the chosen receptacle to make a nest. Make a little hollow in the centre, slip in a shaving of butter, then an egg yolk.
