Frittata Verde

Frittata, eggah, tortilla - basically these are the same thing spoken with different accents: a solid cake-like omelette where beaten eggs have been used to bind a tasty filling, usually cooked vegetables. I have suggested broad beans, peas and spring onions because these are usually to hand. A non-stick frying pan really comes into its own for the cooking.
