Large baked potatoes with a little something tucked inside are a god-send when you are hard pressed, or hard up. All you need is one or two (depending on how hungry you feel) large potatoes per person, some grated cheese, butter, salt and pepper. And, if you want to make a pretty solid meal of it, an egg for each potato.

Ingredients

  • 1-2 large potatoes, scrubbed
  • salt and pepper
  • a knob of butter

Method

Dry the potatoes and rub salt into the skins. Bake in the oven at 220°C (425°F, gas mark 7) for about 1 hour or until they feel soft when pinched. Cut a cap off each potato and scoop out a little pulp. Put a knob of butter and a handful of grated cheese
