A remarkably nice and simply made pudding.
Drain the apricots, reserving the syrup. Cut the crusts off the bread. Fresh white bread is best for this dish. Butter thickly on both sides. Lay the slices over the bottom of a baking tin.
Press the apricot halves firmly into the buttered bread. Sprinkle sugar (preferably Demerara) generously over the top, and a dusting of cinnamon.
