A light summery dish. I suggest penne as the pasta shape, as they echo the courgette sticks in size.
Slice the courgettes lengthways, remove some seeds, then slice again lengthways into quarters, then into little sticks. Place these in a colander, sprinkle lightly with salt and leave to sweat for 10-15 minutes to extract some moisture.
