Tzatziki is a refreshing blend of cucumber and yoghurt; it makes a pretty and complementary filling for halved, peeled tomatoes. The tomatoes should be ripe so this is best made when they are in season.
Peel the cucumber, cut it in half lengthways and scoop out the seeds with a teaspoon. Chop the cucumber quite small, put it in a sieve and sprinkle it with salt. Leave to stand for 20 minutes to draw out some of the moisture, then drain and mix with the yoghurt. Add the garlic and mint or coriander, and season with salt and pepper.
Pour boiling water over the tomatoes, leave for 1 minut
