This is a much more sustaining dish than it sounds. If it is to be the main dish I suggest serving it on a bed of puréed spinach - the slight bitterness tones down the richness of the sauce. You can use more or less eggs according to your appetite.
Start with the sauce. Melt 1 rounded tablespoon butter, stir in 1 rounded tablespoon flour, pour on 600 ml (1 pint) cold milk and bring to boil over moderate heat. Reduce the heat to simmering point when the sauce boils. In a minute or two, it will thicken considerably. Now add the grated cheese, stirring for a minute or so till it melts.
