Eaten with crusty bread, or pitta warmed in the oven, nothing is more quick, appetizing or refreshing on a hot summer day. I love crude food, and this is definitely it. Ingredients and their proportions can be varied at will, according to what is available, but feta cheese, crumbled, is a must, as are black olives.

Ingredients

  • 4 large ripe tomatoes
  • half a cucumber
  • 1 sweet onion
  • a handful

Method

Slice tomatoes vertically into segments. Peel the cucumber stripily, and chunk. Slice peeled onion into the thinnest rounds. Combine with black olives in a plain white dish. Crumble feta cheese into the dish and dress with a fruity olive oil, salt, pepper and the merest squeeze of lemon juice or splash of vinegar.
