Excellent picnic food to eat with a salad dressed with yoghurt, and pitta bread. Alternatively, it makes a good party dish served with rice and a hot tomato sauce. The remarkable thing about this chickpea recipe is that the chickpeas do not need to be boiled, making it economical on fuel.
Soak the chickpeas in cold water overnight. Grind the chickpeas in a food mill, blender or food processor. If you are using a food processor, put the onions, garlic and parsley or coriander in with them. Otherwise, chop these finely and mix them into the ground chickpeas.
