Give credit where it is due: British Rail was usually associated with sandwiches soggy with mayo, but I first ate this sparky starter in the dining car of a Great North Eastern Railway train en route to Edinburgh, and found it hit the spot. I have made it myself since; it is unusual, looks appetizing and tastes good. A neat, easy start to a dinner party.
