Pigeon Casserole

Unless you know an obliging farmer, pigeons are not all that much cheaper than cheap chickens. On the other hand, their firm, dark meat has infinitely more flavour and interest than factory-farmed chickens. Young birds are good plainly roasted, wrapped in bacon, but if there is any doubt about their age this casserole method is a safe bet.
