Home-made Venison Sausages

A home-made sausage, let’s face it, has real style. Made with venison, this is dinner party food, a bother to make but on the other hand brilliantly easy to cook. Venison is too lean to make a juicy sausage, so the fatty pork makes up for this deficiency as well as reducing the cost. Serve with one of the mixed vegetable purées, or lentils, braised red cabbage, and Onion Compote, or Cumberland sauce.
