This is the pauper’s version of a famous Chinese feast dish. Breast of lamb is a very cheap cut which, like duck, is fatty and flavoursome, and during long slow cooking in a honey glaze will become crispy on the outside with rich shreds of meat on the inside. You can make the pancakes yourself, following the recipe below or, if you can get to a Chinese supermarket, buy them ready-made. There’s no pretending it isn’t time-consuming making the pancakes, but it should make you pretty proud of
