This is an excellent dish with which to impress. It is actually rather easy to make, but doesn’t look it. The quantities given make a large pudding - it might be better to try a half-size pudding first.
Clean the kidneys well, removing all gristle and the cores. Skin them and chop them into small pieces. Cut the beef into 2.5 cm (1 inch) cubes and roll them in seasoned flour.
