At the time of going to press, the butcher was selling hands of pork for £4 each, one of the cheapest things in his window. In this recipe, the highly flavoured pork can be served as part of a Chinese meal with other vegetable and rice dishes - a way of making this small joint satisfy a party.

Put the pork in a heavy-based saucepan and cover with cold water. Bring to the boil and boil, uncovered, for 5 minutes.
