This makes the most delicious jelly - soft and wobbly, with an incomparably fresh flavour. Blood oranges are especially good in this recipe, when available.

Ingredients

  • 9 large oranges
  • 1 lemon
  • 125 g (4 oz

Method

Thinly peel the rind from one orange and half the lemon. Put the sugar in a small saucepan with 4 tablespoons water and heat gently, stirring occasionally, until the sugar dissolves. Bring to the boil and boil for 5-10 minutes to form a syrup. Pour on to the orange and lemon rind while still boiling.

Squeeze the juice from all the oranges, and the lemon, and strain through a nylon sieve
